All it takes is one meeting with a caterer to start visions of menu possibilities dancing in your head. Fresh strawberries dipped in white chocolate, crisp water chestnuts wrapped in prosciutto, savory Portobello mushrooms drizzled with herb-infused olive oil, asparagus draped in a blanket of bearnaise sauce, Chicken Marsala resting on a bed of pasta. The reality will be a sublime feast on the wedding day. The reality also will require lots of careful planning.

A taste of what's to come. Before making a final decision on the meal, ask the chef for a taste test. Take into account the food presentation as well as the taste; you could even photograph the plate so everyone will remember the arrangement agreed upon.

Just like mama made. While you'll definitely want to ask about a chef's signature dishes, you also could request a special dish from your own family's recipes. Local caterers say couples often ask chefs to re-create favorite family dishes, from mom's lasagna to great-grandma's Hungarian goulash.

Man your stations. A popular trend at receptions today is a buffet meal with serving stations. First came elegant carving stations, with a chef handcarving meat for each guest. Now interactive options include a giant wok for custom stir-fry entrees; pasta, fajita and tempura stations; and potato "martini" bars, featuring several kinds of flavored mashed potatoes served in martini glasses, with toppings such as bacon, cheddar cheese and guacamole.
